On a mission to add fiber

Since I have been trying to achieve more fiber in my diet I have found new ways of adding it. Recently I found a way to improve of my old time favorite, Cream of Asparagus soup. Which, by the way, is one of my favorite soups. Now I think I found a way to make it taste even more delicious, and my husband even loved it.

First I found Pinterest recipe to start. It seemed pretty easy and basic. Then I added jalepeno, kale, a dab of avocado, and about a quarter of a can of white beans. Once everything was pureed, no one had a clue.

I have to say it was fabulous and filling. The beans gave it a nice body. I make some grilled turkey, tomato, and cheese panini’s to go along side, but even just crackers would be fine.

The more I delve into this High-Fiber gig, the more I like it. It’s definitely body cleansing, and it feels good. I can’t wait to see what a few weeks of fiber can do. I am already so happy with the food, and the fact that I’m not walking around starving.

More then anything I am so happy to have my husband along with me on this journey and he isn’t even complaining too much. Well, maybe he did mention being the gassiest he’s ever been in his entire life! And he isn’t even eating it for breakfast and lunch. Haha!!!
