One of my new favorite treats I kinda created on my own after discovering a breakfast recipe on my new fiber diet, and it is so amazing I had to share.
Banana is one of my favorite things to go to because it’s easy to have around. I prefer the natural peanut butter with honey but you can use whatever you like.
Banana Peanut Butter Split
Banana (peeled)
2 tbsp natural peanut butter
1/2 cup frozen mixed berries
1 tbsp chia seeds
1 tbsp dark chocolate Hershey syrup
Cut banana in half and place in bowl.
Place peanut butter on top.
Meanwhile, heat berries in microwave for 30 seconds, stir then 30 more seconds and add chia seeds and stir.
So many of you may already know I’m on a high-fiber diet, per my doctor’s suggestion, and if you didn’t now you do. I am now on my fourth week and things are moving right along.
No, I have not been 100% faithful. Yes, I have eaten out, eaten off the diet, and definitely not followed some things to a T. However, I have lost 9.6 pounds so far.
My body has started to get used to all the fiber and what once felt like a pressure cooker ready to explode, is now calming down believe it or not. I say it’s because you’re not full of poop all the time. The fiber and the water keep things moving, literally.
I am eating more food then ever before, and that’s pretty cool. I feel good and much healthier. I don’t stress myself out when a social situating occurs involving food. I give myself grace and make the best choice I can and then get back on track at the next meal time.
So all around I think this is going great. I am slowly becoming a huge fan of the high-fiber meal plan and will definitely be continuing to eat this way.
How long do we have to walk around full of crap before someone tells us to drop that shit off, literally! My family and I eat well, and I would say I moderately exercise. However, the scale never really moves, my digestion is a mess, and I always seem to be constipated.
Until now. I have noticed that it’s not hard to go now, that I go several times a day and that I feel good after. Who knew this was going to be such a life changer.
The key really is to get in a good amount of water. I drink half of my body weight sometimes a little more or less. I’m not by any means perfect and I am not severely strict about this. I modify everything and twist things to fit my budget, my lifestyle, and my tastes. I get ideas from many sources and blend them together to for me and my family, and I suggest you do the same. Everything that works for me, may not for you, and remember that’s okay.
I hope if you have started on a fiber journey also, that you two see great results within your body, mind, and spirit. It is imperative that we strive for only the best for ourselves. Our bodies deserve it.
I am following a meal plan on Pinterest currently, and I have to just say so far most of the recipes have been mind-blowing. If I’m being honest, anytime I hear the word diet, I really hear sacrifice, boring food, and flavorless. Only to my surprise, I have found that I am in love with most of these recipes and today’s was no different.
Southwestern Eggs. Really easy to make, and super delicious and filling. I will definitely be keeping it in the recipe playbook. I have a microwave egg cooker from Pampered Chef that I use on the morning I go to work and I think this will be something I could prep the night before and be ready for and still have a good breakfast!
I’m not a big egg person but this was the perfect amount and having all the fresh flavors involved made me actually enjoy them. Of course I had extra avocado because it’s my favorite, and also a glass of fresh squeezed orange juice! Yum.
Since I have been trying to achieve more fiber in my diet I have found new ways of adding it. Recently I found a way to improve of my old time favorite, Cream of Asparagus soup. Which, by the way, is one of my favorite soups. Now I think I found a way to make it taste even more delicious, and my husband even loved it.
First I found Pinterest recipe to start. It seemed pretty easy and basic. Then I added jalepeno, kale, a dab of avocado, and about a quarter of a can of white beans. Once everything was pureed, no one had a clue.
I have to say it was fabulous and filling. The beans gave it a nice body. I make some grilled turkey, tomato, and cheese panini’s to go along side, but even just crackers would be fine.
The more I delve into this High-Fiber gig, the more I like it. It’s definitely body cleansing, and it feels good. I can’t wait to see what a few weeks of fiber can do. I am already so happy with the food, and the fact that I’m not walking around starving.
More then anything I am so happy to have my husband along with me on this journey and he isn’t even complaining too much. Well, maybe he did mention being the gassiest he’s ever been in his entire life! And he isn’t even eating it for breakfast and lunch. Haha!!!
So last year during my physical my doctor told me that I needed to go on a high-fiber diet and exercise. I did what every good patient would do I went in strong, not even knowing anything about it, and gave up quickly convincing myself that I’m happy with my current weight.
Now a year later and not really losing too much, it was time to face the music, and when he repeated the same mantra to me I realized I was never going to hear the end of this until I tried. So once again I decided to embrace his encouragements and look into a high-fiber diet. Naturally as many of you must know, I started to research on Pinterest. As soon as I started looking for a meal plan I found one that was perfect. It gave me a general idea of what to eat for a week so that I could understand the logistics.
While following this High-Fiber Diet Plan: 1,200 Calories, the things that really impressed me about it was that no fake sweeteners were used. This being said no complex sugars were being used either, what a win! My favorite recipes were the Apple Cinnamon Chia Pudding and the Really Green Smoothie. Both are so delicious. I also found the White Bean & Avocado Toast was actually so good it was mind-blowing, and it was something I was kinda scared to try!!!
My husband was courageous enough to try some high-fiber dinners off this delicious meal plan. We most enjoyed the Fajita Bowls with Jason Mraz’s Guacamole, and the Roasted Chicken & Winter Squash over Mixed Greens, and the Hearty Chickpea & Spinach Stew.
So far I learned that you eat a lot of beans, cruciferous veggies, and squash with a little bit of protein. And don’t forgot to drink enough water. That part is really important and if you read the meal plan mentioned above, it will tell you exactly why.
Now I know what you’re thinking, yes you will literally be full of crap at any given moment and possibly the gassiest person in the world, but it really will settle down once your system gets used to it. Give it a little time and be kind to yourself. After 8 days I feel cleaned out and healthy. I beginning to believe we’ve been doing “cleanses” all wrong!
My results so far in eight days has been five pounds falling off like nothing. Oh, and I’ve cheated, there’s been cake, steak, and tortellini. But moderation is key. This week I’ve started cooking my own recipes and adding in fiber. Like Lemon Tortellini Alfredo that I added spinach to instead of peas. It was delicious. And tonight Spatchcock Chicken with squash, zucchini and Rosemary Braised Beans. Tomorrow I’m making 15 Bean Soup with a ham bone and adding fresh kale to it.
I really hope someone finds this information helpful. I am so far, definitely enjoying this journey into high-fiber and I’m digging how I feel. I’ve been also squeezing my own orange juice every morning. I’ve decided I like it better because it’s so sweet. I find store bought is always so sour to me. I prefer the sweet taste and I love the pulp. A little tip I’ve found is that I get the naval oranges that are sold individually, because they seem to be more ripe and juicy. I usually drink the juice from two freshly squeezed oranges.
There will definitely be more to come from this journey. Hope the results keep coming.
I’ve only ever eaten quiche maybe once, and it was literally years ago. I liked it, but if I wanted to be honest here I really want crazy about eggs when I was younger.
As I’ve started to broaden my horizons in the kitchen, and just to make something out of the norm, I decided to give it a go. I found a recipe on Pinterest for Broccoli Cheddar and Tomato Quiche.
Me being me though, I decided to add other ingredients as well. All together it will definitely be on the menu again. Maybe not this exact one but definitely another quiche. The possibilities seem endless when it comes to quiche!
Vegetable Quiche
4 large eggs beaten
1 1/3 cup of milk
2 mushroom caps sliced
1 Roma tomato seeded and chopped
3/4 cup sharp cheddar
Handful of fresh parsley minced
Handful of fresh cilantro minced
Salt & pepper
1 pie crust
5 broccoli florets minced
1 small jalepeno minced
1 garlic minced
1 thin slice of red onion
INSTRUCTIONS
Place eggs, milk, herbs, salt and pepper, jalepeno, tomato, garlic and onion in a big bowl and mix.
Add cheese, broccoli and mushroom to bowl and fold in.
Pre-heat oven to 350°. Prepare pie crust in pie pan. When ready pour in egg mixture.
Take basting brush and dip in egg mixture and rub on pie crust.
Place in center of oven and bake 60-70 minutes or until golden brown. Remove and allow to cool for 15-20 minutes.
One of the most important things to learn in the kitchen is how to take two things your cooking and balance them with each other. To be honest I have never been the best scrambled eggs cook, but over the last year I have really started to turn a new leaf, and I can actually be proud when I scrabble the egg!!!

Scrambled Eggs
4 large eggs
Pinch of salt
Pinch of pepper
2 tbsp butter
1 tbsp onion and chive cheese
Heat sauté pan to medium/ low heat. Add butter. When melted, add beaten eggs to pan.
Stir eggs frequently, making sure to not let them stick to the pan. Add salt and pepper.
Remove from pan when still looking shiny. This way the egg isn’t dried out.
